Serving up a slice

Todd Mitchell is the owner of Mercato Pizzeria, the latest pizza restaurant to enter the Windermere market. Mitchell has an extensive background in cuisine, and he specializes in preparing the perfect slice - he even spent a year refining his craft at Tony Gemignani's International School of Pizza in San Francisco.

Mercato pizzas can be ordered with hand-pressed dough for an Italian-style crust, or a golden-brown toasted crust if the customer prefers the Greek style. Mitchell uses either a wood-fired oven, or a conveyor oven, depending on the desired style. The dough is made from scratch, using recipes that have been perfected through years of training and experience.

Mitchell is running the business with the help of his wife, Brenda, and his daughters, Alexandra and Madeleine.
