Kevin McDonald was in the professional cook program at College of the Rockies when Cranbrook’s Prestige Rocky Mountain Resort opened 18 years ago, and he had six months of training in the new hotel’s kitchen before he graduated. In September 2015, McDonald returned as the executive chef for the Prestige’s newly opened West Coast Grill restaurant. “I’m not an office chef—I’m involved in all aspects of running the kitchen,” McDonald said. “We’re fortunate to have a really good staff who take pride in their jobs.” McDonald specializes in creating a delicious, diverse, locally influenced menu.
