Corey Fraser
This Golden, B.C., chef inherited a love of cooking from his mother—also a chef
When your mother is a chef, you’re bound to pick up a few cooking tips during your growing-up years.
Such was the case for Corey Fraser, chef and co-proprietor at The Cedar House Restaurant in Golden, whose mom instilled the joy of cooking in him.
Fraser also credits his business partner, Annie Clarke, for the success of this popular fine-dining establishment, set in a four-hectare woodland.
The Cedar House Restaurant has been named one of the Top 50 Places to Eat in Canada for 12 consecutive years by the National Restaurant Guide. The chef was happy to answer a few questions for us.
How did you come to choose this line of work?
I was brought up surrounded by amazing food as my mom was a chef who always instilled in me the joy of cooking for people. I decided to take my formal training in 2002.
What is it about your work that has you excited to get out of bed in the morning?
Having complete creative control over the products and menu items I work with, experimenting and creating unique dishes that please our guests, and being my own boss is pretty ideal!
What’s your focus for 2016?
To continue to expand my knowledge of fine foods while showcasing a fresh, local and unique dining experience.
Why did you decide to become an entrepreneur in the Kootenays?
My love for the mountains, lakes and rivers make it an ideal place to call home. The community of Golden and the small-town feel attracted me to the Kootenays.
Anything else you’d like to add?
I did want to mention that I do have an equal business partner who is a large part of the success of our business. Annie Clark is the general manager/proprietor of The Cedar House Restaurant. We started and run the business together.
