Anjali and Chris Mathias own Baba’s Indian Cuisine in Nelson, B.C. Baba’s got rave reviews from Kootenay Business magazine readers in the Best Places to Eat and Drink survey. Anjali was on hand when we called, and answered a few questions for us.

Do you have a favourite cookbook or other source of inspiration for your culinary creations?

My husband and I do the cooking at the restaurant. We don’t have a favourite cookbook, though we do look at them and get ideas from them and then create our own recipes. We actually plan to write our own cookbook someday.

Do you have your own recipes ready to be put into a book?

No—that will take some work. If you ask me for an actual recipe, I wouldn’t be able to tell you exact quantities of the seasoning. I just look at the amount of vegetables and meat that I have to cook, and my hand seems to know how much seasoning to add.

Which dish do you consider your signature and why?

My own favourite menu item is probably the lamb vindaloo. For my own meal, though, I would create something new. When I go out for dinner, I like Chinese or Indian food because I don’t enjoy bland food.
